Chocolate Lava Cakes

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 4 ounces (about 115g) semi-sweet or bittersweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • Powdered sugar, for dusting
  • Vanilla ice cream, for serving (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Grease and flour four ramekins or small baking dishes.
  2. Melt Chocolate and Butter:
    • In a heatproof bowl, melt the butter and chopped chocolate together. You can do this in a microwave or using a double boiler. Stir until smooth and well combined. Allow the mixture to cool slightly.
  3. Prepare Batter:
    • In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until well combined. Add vanilla extract and mix.
    • Pour the melted chocolate mixture into the egg mixture and stir until smooth.
    • Sift in the flour and add a pinch of salt. Gently fold the dry ingredients into the chocolate mixture until just combined.
  4. Fill Ramekins and Bake:
    • Divide the batter equally among the prepared ramekins.
    • Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes. The edges should be set, but the center will still be soft.
  5. Serve:
    • Carefully remove the lava cakes from the oven and let them cool for a minute.
    • Run a knife around the edges to loosen the cakes, then invert each onto a serving plate.
    • Dust with powdered sugar and serve immediately. You can also serve with a scoop of vanilla ice cream for an extra treat.
