Chicken Alfredo Pasta

Ingredients:

  • 8 oz (about 225g) fettuccine pasta
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese
  • 1/2 cup (120g) unsalted butter
  • 1 cup (240ml) chicken broth
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the fettuccine pasta according to the package instructions until al dente.
    • Drain and set aside.
  2. Season and Cook Chicken:
    • Season chicken pieces with salt and pepper.
    • In a large skillet, heat olive oil over medium-high heat.
    • Add chicken pieces and cook until browned and cooked through. Remove from the skillet and set aside.

    • Toss everything together until the pasta is coated in the sauce and the chicken is evenly distributed.
    • Cook for an additional 2-3 minutes until heated through.
  5. Garnish and Serve:
    • Garnish with chopped fresh parsley.
    • Serve the Chicken Alfredo Pasta hot, with additional Parmesan cheese if desired.
